Unlike other cultivars, Salella ripens early, often already at the beginning of October. This allows us to harvest it while the fruit is still green, obtaining an oil with a livelier and more recognizable profile.

This early harvest affects two essential aspects:

  • it helps preserve a strong natural presence of polyphenols, often associated with the quality of extra virgin olive oil;
  • it gives the oil a more decisive taste, with balance shaped by herbaceous, fresh, and lightly peppery notes.

From hand harvesting to cold extraction

At our agriturismo, production still follows a logic of attention and restraint. Hand harvesting allows us to treat the fruit gently, avoid unnecessary stress, and select intact olives.

After harvesting, the olives are taken to the mill the very same day and processed with cold extraction, in order to preserve aromas, structure, and organoleptic qualities as much as possible. Another distinctive aspect is that we do not use nitrogen fertilizers or plant protection chemicals. To limit the damage caused by the olive fruit fly, we choose an early harvest, generally at the beginning of October during veraison.

It is a decisive step: the quality of the oil does not depend only on the grove, but also on the speed and precision with which the olives reach the pressing stage.

Why we choose short timings

  • the olives retain greater freshness;
  • the risk of unwanted alterations is reduced;
  • the aromatic profile stays cleaner, sharper, and more recognizable.
