1 kg flour
4 eggs
25 g sugar
One pinch of salt
Spumante (sparkling wine)
Extra- virgin olive oil for deep frying
Sugared almond (to garnish)

Mix all the ingredients with the spumante until obtaining a smooth and elastic dough. Form cylinders and cut them in the shape of 1 or 2 cm gnocchi.

Deep fry the struffoli, put on a dinner plate and mix them with part of the honey previously pre-heated. Form donut with the struffoli all around the edge of the plate, leaving a well at the centre.

Brush with the remaining honey and garnish with the sugared almond.
